From a classic chicken and broccoli noodle casserole to enchiladas, lasagna, and more, these healthy chicken casserole recipes are suitable for any occasion. They make great weeknight dinners and many can even be prepared in advance!
When it comes to easy dinner ideas, casseroles are always a good choice. They typically require minimal prep, which not only means less time in the kitchen but also fewer dishes to clean. Plus, the bake time is generally an hour or less.
While you can make casseroles from nearly any ingredient, chicken is always one of my go-to’s. It’s just so versatile and works with so many different flavors. You can even use a rotisserie chicken to cut the prep time down!
Below I’ve rounded up some of my all-time favorite chicken casserole recipes. They’re made from scratch with real ingredients, no canned cream of chicken soup or cream of mushroom soup in any of these recipes!

Made with shredded chicken, lots of cheese, and a homemade enchilada sauce, these Chicken Enchiladas easily rival anything you can find at your local Tex-Mex restaurant. Add your favorite toppings like sour cream and serve with rice for an easy weeknight dinner.
This Chicken Divan recipe is made entirely from scratch with layers of tender cooked chicken breast and broccoli in a creamy sauce topped with breadcrumbs. A simple yet impressive dinner.
Chicken Parmesan Lasagna is the perfect combination of two classic recipes, featuring layers of breaded chicken breast, lasagna pasta noodles, ricotta cheese, and marinara sauce. Perfect for feeding a crowd and it freezes great.
These Chicken Enchiladas Verdes (aka Green Enchiladas) are a traditional Mexican dish made with white corn tortillas, salsa verde, chicken breast, and queso fresco. A quick, tasty, and authentic dinner that comes together in less than an hour.
Each of these chicken casserole recipes will have individual storage instructions so be sure to check that specific recipe post. But, in general, chicken casserole leftovers will last for 3 to 4 days in the fridge.
I recommend keeping the casseroles tightly covered with foil or transferring the leftovers to an airtight container.
You can typically reheat the entire casserole dish, covered, in the oven at 350F but reheating individual servings in the microwave works too.
Casseroles can be assembled ahead and kept in the freezer for make-ahead meals. Simply cover the casserole dish with plastic wrap and foil, and use a sharpie to write the name of the recipe and date and a note reminding you to remove the plastic!
To bake, transfer the baking dish to the refrigerator the day before so it thaws overnight. Then bake in the oven as instructed on the recipe.
