These pancakes make an adorable and delicious holiday breakfast. They couldn’t be easier to make, leaving you more time to enjoy the morning. And your kids will love them!
Christmas Breakfast
One of our favorite thing to do during the holidays is to spend time together enjoying good food. Sometimes this means family recipes that have been passed down through the years, or more impressive labor intensive recipes that we only pull out for special occasions. But quite often, they are simple recipes that taste delicious and create happy memories for my kids.
These Reindeer Pancakes have become one of those recipes for us. Made with my go-to Healthy Pancakes, they are easy enough for even the smallest helpers to get involved. And served with a glass of Homemade Eggnog, they make a meal that everyone looks forward to.
How to Make Reindeer Pancakes:
- Mix up your pancake batter.
- Pour the batter onto the griddle. You will need to make one large pancake for the head, a smaller pancake for the nose, and two small oval shaped pancakes for the ears. This Batter Dispenser works great for shaping pancakes- I use it all the time!
- Cook the bacon as desired.
- Assemble your reindeer on your serving plates. Begin by placing two slices of bacon on top for antlers, followed by the two small ear pancakes. Top them with your large pancake, and finally place the smaller pancake on the bottom for the nose.
- Finish your reindeer by placing two blueberries on the large pancake for eyes, and a cranberry sliced in half for the nose.
Substitutions:
- Eyes– chocolate chips or candy eyes work great here too. You can also try piping the eyes on with a chocolate hazelnut spread.
- Nose– raspberries, sliced strawberries, dried cranberries, or even mini Oreos or Nilla wafers would work great. Great creative!
- Antlers– you can also make antlers with your pancake batter. Just pipe or pour long, thin pancakes onto your griddle. We’ve also piped chocolate hazelnut spread directly onto the plate before adding the pancakes. Pretzel rods also work great!
- Pancakes– obviously, you can use pretty much any pancake batter you like for these Reindeer. Here are some of our favorites:

For the Reindeer:
- 8 slices bacon cooked
- 8 blueberries
- 2 cranberries, raw

Place all ingredients, except eggs, coconut oil and blueberries into a good quality blender. Blend until oats are ground and everything is mixed well.

Add eggs and pulse until incorporated.

Heat a griddle over medium heat and melt a teaspoon or two of coconut oil or butter. Pour about 1/4 cup of batter onto the griddle for each large pancake. Make smaller pancakes for the nose, roughly half the size of the large pancakes. Pour small oval sized pancakes onto the griddle for the ears. Brown on both sides (about 2-3 minutes per side).

Place the bacon on your serving plate, along with the ear-shaped pancakes. Top with your large pancake, and finally the nose pancake. Add the blueberries for the eyes. Cut the cranberries in half to make a nose.
