You’ll need to do a little advance planning if you make the brine, but it’s absolutely worth it. Whisk together 4 cups of cool water with 3 tablespoons of kosher salt in a large pot. Submerge the pork for 45 minutes at room temperature, or refrigerate for up to 12 hours. Drain and pat dry before proceeding with the recipe.
