What’s So Healthy About These Chocolate Oatmeal Cookies?

We have substituted the unhealthy, sugary ingredients found in traditional cookies for healthy ingredients that can be found at your local health food store. Instead of white cane sugar, we use monk sugar, which comes from a very sweet, low-carbohydrate Chinese fruit. We’ve replaced dairy milk with high-protein almond milk. If you’re sensitive to gluten or mindful of your gluten intake, we have substituted regular oats for gluten-free oats. Most important of all, we have opted for raw cacoa powder instead of the usual cocao powder. Cacoa is high in selenium and magnesium plus it’s packed with antioxidants. (1,2)

What You Will Need

Materials

  • Medium or large saucepan
  • Parchment paper
  • Tablespoon

Ingredients

Our special ingredients may require a quick trip to the health food store, but we promise that these are well worth the excursion!

  • 1/2 cup organic butter
  • 2 cups granulated monk fruit sugar
  • 1/2 cup unsweetened almond milk
  • 4 tablespoons organic raw cacoa powder
  • 1/2 cup organic almond butter
  • 2 teaspoons vanilla
  • 3 cups gluten-free oats

Steps

  1. Heat the saucepan on low heat.
  2. Add the organic butter.
  3. Add the granulated monk sugar as soon as the butter starts melting.
  4. Pour in the unsweetened almond milk.
  5. Add the raw cacoa powder.
  6. Stir until the mixture is fully combined.
  7. Let the mixture become bubbly but keep an eye on it you don’t want the butter to burn.
  8. Add almond butter, vanilla, and gluten-free oats.
  9. Mix all together until the consistency is somewhat smooth.
  10. Scoop spoonfuls onto parchment paper.
  11. Let sit for at least 15 minutes so that they solidify.
