Fresh, homemade guacamole is one of those recipes that everyone should have in their recipe arsenal. It’s healthy, easy to make, and elevates pretty much any meal. Our version features fresh tomato, cilantro and lime juice.. along with the perfect blend of seasonings.
The secret to a good guacamole is choosing the best avocados, fresh lime juice, and seasoning. To decide if an avocado is ripe, look for an avocado that is dark green/black in color. It should be firm, but will yield slightly when you hold it in the palm of your hand and give it a gentle squeeze. If it feels mushy or leaves an indent when you press it, it is probably overripe. If your avocados aren’t quite there yet, leave them on the counter until they’re fully ripe. Once ripe, store them in the refrigerator to keep them at their prime ripeness for a bit longer.
Guacamole is best served the day it is made. Leftovers can be stored in the fridge for up to 3 days. To keep it green, press plastic wrap on top of the guacamole. Or, smooth it down in your storage container and carefully add about 1/4-inch of cold water on top. Simply pour the water off before serving.
If your avocados are perfectly ripe and you are not ready to use them, throw them in the freezer! Simply wash and dry, wrap in plastic wrap, and put in a resealable freezer bag for 3-6 months. Frozen avocado works great for guacamole.

Slice the avocados in half and remove the seeds. With a spoon, scoop out the avocado and add to a medium bowl. Mash with a fork until the consistency is how you like it. (if you like some texture, stop mashing when there are still small chunks of avocado)
Add diced tomatoes, lime juice, minced garlic, chopped cilantro, salt, and onion powder. If you like a little bit of heat and added flavor, add the Tony Chachere seasoning. Stir everything together to combine.
Taste and add more salt and lime juice if it seems like it needs a bit more flavor. Refrigerate 1 hour for best flavor, or serve immediately.
You can store in an airtight container for 3 days in the fridge. The less air that the guacamole is exposed to, the less it will turn brown. If there is a layer of brown on top, with a spoon, carefully scrape it off and enjoy the fresh green guacamole underneath!
