This Apple Cinnamon Baked Oatmeal is packed with apples and cinnamon, and baked into a chewy, satisfying dish with a sweet and crunchy topping. It makes a delicious, simple and hearty breakfast.
It’s no secret that we love oatmeal over here. It’s filling, nutritious, economical, and the perfect blank canvas for so many flavors. We’ve been going a little nuts with baked oatmeal lately, and I have no regrets. For starters, it’s easy! Just stir the ingredients together and bake until golden. It has a delicious, chewy texture that is wildly different from the stovetop variety, so it’s great for people who don’t love the texture of traditional oatmeal. It’s great when you’re cooking for a crowd. And leftovers heat up great, so it’s perfect for meal prepping.
This Apple Cinnamon Baked Oatmeal is all those things. Plus it is packed with apples (from fresh apples and applesauce), lots of warm spices, and a sweet and crunchy golden topping. Sometimes we serve slices with a drizzle of maple syrup, or put it in a bowl with a splash of almond milk. No matter how you enjoy it, it makes an incredibly satisfying and delicious breakfast bake. And because it comes together so quickly, we make this little gem regularly.
The type of oats you use for this recipe is really up to your preference. We use old-fashioned rolled oats because they make a delicious dense, chewy texture.
Store any leftover baked oatmeal in the fridge. Cover it and store right in the pan you baked it in, or transfer to an airtight container. It should stay good for up to 5 days. Reheat leftovers in the microwave.

Preheat oven to 350 degrees F. Lightly coat an 8×8 inch baking dish with cooking spray or line with parchment paper.
In a large bowl, stir together oats, baking powder, cinnamon, nutmeg, ginger, and salt.
In another medium bowl, whisk together milk, applesauce, maple syrup, eggs, and vanilla. Stir the milk mixture into the dry oat mixture until combined.
You can peel the apples if you want, or leave the skins on before dicing. Layer diced apples on the bottom of the baking dish and pour the oatmeal mixture over the apples. Spread evenly with a spatula. Sprinkle chopped pecans and brown sugar on top (if using)
Bake for 35-40 minutes or until the mixture is setup, golden brown and slightly crunchy on top. Remove from the oven and let it sit for a few minutes before slicing. Serve warm and enjoy!
